Just as the name suggests, this meal mostly a side dish is made with three basic ingredients; fried ripe plantains (dodo), fried chicken gizzards and pepper sauce. This food is the best invention since sliced bread. Whoever thought of the combo is pure genius. For someone like me who doesn’t really fancy plantains, this has become a regular in my house because the sweetness of the plantains, the savor of the gizzards and the added spice and moisture from the pepper sauce is just a match made in culinary heaven.

PS: did you notice that my camera was lying beside my food? It was giving me issues, only for the issue to be solved after we had finished everything! Rolling my eyes. I don’t know why but every single time I have cooked this meal, we either forget to snap, snap the process but not the product or the camera just starts having issues with the memory card.

INGREDIENTS

Gizzards/goatmeat/beef

Ripe plantain

Green Pepper

Pepper mix (blended tomatoes & pepper)

Knorr seasoning

Salt

Vegetable oil

Onions

Sweet chili sauce (optional but delightful)

PREPARATION

  1. Cut the plantains into cubes, fry in hot oil. Or go the healthy way by pooping it into the oven to grill. Set aside
  2. Wash the gizzards, put in a pot, add salt, knorr, onions, Cameroon pepper and whatever seasoning you like, set on fire and cook till soft. You may need to add a little water to get some stock from it.
  3. When the gizzards or whatever meat you are using is soft, drain to separate the stock and set aside.
  4. Chop the gizzards into cubes to match the size of the plantains, fry in hot oil or grill it for a healthier option.
  5. Now we make the sauce. The ratio of pepper to tomato should depend on how pepperish you want it to be. Boil the blended pepper mix to reduce the water from it.
  6. Put a pan on heat, add some vegetable oil, add chopped onions to the hot oil and sauté.
  7. Add the pepper mix and let it fry for about 10 minutes, add the stock. Taste, for salt.
  8. Add the fried gizzards into the sauce and stir well, let it cook for about two minutes to absorb some of the pepper sauce
  9. Now add the plantains (dodo), stir well to incorporate everything.
  10. Let it cook together for about 1 minute and you will notice the plantains will suck up some of the sauce. Add chopped green peppers, stir and bring down from heat.
  11. Serve as an appetizer or side dish.
